Designing the perfect wedding cake sounds simple enough, right? Pick a style, flavour and hope that it matches your final décor. However, if you want your wedding cake to be an artwork in its own right and stand out from the crowd you will need to get a little creative. In a Kisses & Cake exclusive we’ve teamed with some of the industries most luxurious and talented to show how magical a bespoke wedding cake inspired by a gown can look.
Our Bridal Coaches enlisted the help from leading cake designer Black Velvet Sydney to create three wedding cakes inspired by Vera Wang gowns and Chopard Jewellery. In a two day shoot held at the historic InterContinental Hotel Sydney and Black Velvet’s studio, photographer Next We Meet, floral designer Fresh Creative Styling, model/make-up artist Danielle Rendina helped us capture the perfect 'gown inspired cake'.
Orlando Sanpo from Black Velvet Sydney showed us how the essence of a gown from design to final creation can be captured by an experienced cake designer and encapsulated in the final masterpiece. This is done in a subtle and tasteful way so as to complement, not copy the bride.
At the first meeting the bride is asked about colours and dress design. It is really useful for the cake designer to have a picture of the bride wearing her gown, veil/headpiece and jewellery so the cake designer can visualise all the finer embellishments and see how the gown falls on the bride. The bride is also asked about colour choices and in particular the colour/s that she wishes to be dominant at her wedding. Décor, flowers, gown colours and jewellery features assist the cake designer to form a visual impression and provide the inspiration for the final cake design.
Orlando also likes to get to know and understand his client’s individual taste and personality. This enables him to work with them and to ensure that the cake also reflects the person's sense of style. Cakes can be catered to meet brides who prefer something either traditional or more upbeat.
Orlando said, “For the bride with a more eclectic personality, we can incorporate bolder pieces from the outfit which are representative of the bride and the gown she chosen.”
"Like wedding gowns, cakes also follow style trends. Semi naked is popular, it’s simple and cheaper. It can be a great for the summer months paired with trendy flavours like, citrus, lemon, and passion fruit. But overall, our most popular flavour is caramel.”
The initial sketch can take about forty-five minutes and will display the exterior design of the cake. It essential that the cake designer is made aware of the number of wedding guests as this will impact on the final price of your cake. Special designs which take extra time to create may also incur extra surcharges.
Orlando also explained that not every tier of a multi tiered wedding cake has to be real. Often only two tiers of an eight tier cake can actually be eaten. So no matter how big or small your wedding, you can still match your layered gown to a multi-tiered cake.
Having settled on the design concept and price is confirmed, the next step is to make the cake. This includes designing everything from each flower to the lace, the shape and the size. The process can take up to six months so Orlando recommends that the client allow plenty of time to ensure that they will not be disappointed.
“Once we start actually building the cakes, it can take between two to four weeks to finalise. The baking element takes place four days before the wedding and all the sugar work will be done a month before," he said. The cakes are then crafted with the finest of ingredients.
“I use buttercream to frost the cake. Once the cream sets for a day and I then put the fondant on and we do that two days before the wedding, so that it’s soft and creamy".
"When designers do the fondant a week before, and refrigerate or freeze it, it is very hard. Our cakes taste very moist and fluffy, because we do all of the baking and last minute decorating so close to the wedding. Everything we put on the cake is edible and made from sugar, if it can’t be eaten, we don’t put it on the cake,” Orlando explained.
Time and effort are put into all of the cakes with the end result being a finished product that is meaningful and crafted with care.
VERA WANG & CHOPARD AS INSPIRATION
For our exclusive shoot, Orlando created three gorgeous cakes that were inspired by three gowns from the Vera Wang Spring 2016 Collection: the Daniela, Esme and Camilla. With a plethora of sheer lace, tulle, tiers and flowers these dresses did not lack inspiration. Orlando discusses his journey during the creation of the three beautiful masterpieces.
“The concept of all the gowns appeared to be Spanish in style. I looked closely at every detail, petal, laces and the overall shape of gown... from the structure of the gown, the bead work, lace and the skirt. Just like when you design a house you must know exactly what the design and materials will be first."
“Vera Wang gowns are edgy, modern and elegant, so the designer needs to think outside the square when creating these bespoke designs. The cakes needed to be bolder and non traditional. I wanted the cakes to represent the dresses, not look exactly like them.”
Orlando used a mostly white colour scheme with a pop of gold in his designs. He also worked in some delicate sugar roses, pearls and perfectly shaped bows to capture the Vera Wang designs. Orlando replicated the four layers of fabric in the Daniela gown by working with four tiers of cake. He also worked with clean lines and white trim to reflect the structure of the gown. Gold hand painted and downward flowing lace was added to the cake to replicate the full and voluminous skirt of the Esme dress. A vanilla coloured lace was overlaid on the cake to symbolise the floral pattern of the Camilla dress.
Simple etchings and silver dots were placed on the cakes inspired by the floating diamonds that were seen on the Happy Diamonds necklace and watches featured by Chopard. The cakes were designed with elegant and rounded features to illustrate the similarly unique designs of the jewellery pieces.
When selecting the flavours for the gowns, Orlando explained:
“For a very classic gown, vanilla would be recommended. But as these gowns are more edgy, then you’d look at bold flavours such as caramel, rose water or red velvet”.
